Lab-Grown Meat Clears Regulatory Hurdles. Now Comes the Cost Problem

Lab-grown meat producers are scaling up manufacturing capacity after years of regulatory approval processes, betting that falling production costs can finally make the products price-competitive with conventional meat.

Lab-Grown Meat Clears Regulatory Hurdles. Now Comes the Cost Problem
Cultivated meat producers are investing in larger bioreactor facilities to bring down per-unit production costs.

Cultivated meat, grown from animal cells in bioreactors rather than raised livestock, has cleared regulatory approval in a growing number of markets after years of safety review, and producers are now shifting focus toward the harder commercial challenge of scaling manufacturing enough to bring production costs down to levels competitive with conventional meat.

Early production costs for cultivated meat were dramatically higher than conventional meat, but companies report meaningful cost reductions as they’ve scaled bioreactor capacity and refined the growth media formulations that represent one of the largest remaining cost inputs in the production process.

Consumer acceptance remains a separate challenge from cost

Even if production costs continue falling toward price parity, consumer research consistently shows meaningful hesitancy toward lab-grown meat products among a significant share of shoppers, a separate psychological and cultural hurdle that falling prices alone won’t necessarily resolve without sustained consumer education and product familiarity over time.

“We can solve the cost problem with engineering. The acceptance problem is a much slower, much more human process.”

With several large-scale production facilities now under construction and regulatory approvals continuing to expand into new markets, the industry’s near-term challenge has shifted from proving the technology works to proving it can be manufactured at a genuinely competitive cost and, separately, convincing enough consumers to actually choose it once it is.
